Happy Pancake Day!

 

Happy Pancake Day! I might not exactly be a domestic goddess when it comes to the kitchen, but I'm working on it and this recipe is a firm favourite - super warm, fluffy and spongy! Perfect for beginners or real culinary whizzes alike, this Nigella Lawson recipe will definitely have them asking for seconds. Here's how to make them:

 

INGREDIENTS (serves 4-6):

  • 2½ teaspoons baking powder
  • 1 pinch of salt
  • 1 teaspoon white sugar
  • 2 large eggs (beaten)
  • 30 grams butter (melted and cooled)
  • 300 millilitres milk
  • 225 grams plain flour
  • butter for frying

 

STEPS:

1. You'll save yourself a lot of time by popping all the ingredients in a blender and blitzing until combined. But if you want to do it the old-fashioned way, you'll need to make a well in the flour, baking powder, salt and sugar, beat in the eggs, melted butter and milk, and transfer to a jug: it's much easier to pour the batter into the pan than to spoon it. 

2. Heat a smooth griddle or pan on the stove.

3. When you cook the pancakes, just remember that when the upper side of the pancake is blistering and bubbling, it means it's time to cook the second side. It should only take a minute at the most.
